The dish has Chinese origins, and the name of the dish is derived from the Hokkien phrase pian i sit, meaning something. Adding a boiled egg, siomai, and chicharon is optional. Pancit is a staple Filipino dish found at numerous feasts and celebrations, consisting of stir-fried noodles with meat and vegetables such as chicken, pork, shrimp, celery, carrots, onions, garlic, and cabbage. Kinalas is a Bicol dish consisting of noodles cooked with scraped meat from the head and other sections of pork or beef, and a rich deep-brown sauce made from the brains of a cow or pig. There is no doubt about how noodle dishes like pancit is popular in the Philippines. We oftentimes add coconut milk to most Bicol dishes including this one. Its texture is similar to a typical pancit canton but made chewier and tastier. Then we mix it with Dinuguan, this is composed of pork meat and pork blood, yes it's blood. Bato, Camarines Sur is famous for another type of pancit called Pancit Bato. It's firmer and have a smoky texture as compared to other noodles. This is made of Pancit bato (it originated in a place called Bato in the Bicol province). This weird looking meal is called Pancit dinuguan, it's a famous delicacy of my hometown Albay also know as Bicol region (this is where you can find mayon volcano).
